About Guildsmen Café
Guildsmen Café is an independent specialty coffee shop based in Guelph, Ontario, and is the brainchild of Jessica "Jay" Lee, a coffee professional since 2012. We seek to provide only the best coffee, using a rotating coffee selection from excellent local roasters to ensure fresh and in-season coffee. We take care to source ingredients in an ethical and sustainable way.
About Jay | they/them/their
Jay began working as both a barista and apprentice roaster in 2012. Their love of coffee has led them to expand their repertoire to include head barista and technical specialist. They have also held the position of technical and sensory judge at the Central Canadian Barista Competition.

They hope to one day visit various coffee origins around the world in order to get a better understanding of the journey of coffee from farm to cup.
About Ryan | he/him/his
Ryan has been a culinary professional with a career sparked by a desire for creativity in his work, encompassing a decade of experience in Canadian and ethnic cuisines. He specialises in blending international, traditional flavours with local ingredients and contemporary flair.
His journey has seen him cooking at Del Dente and Red House in Kitchener, as well as Crafty Ramen in Guelph. He currently holds the position of Café Chef at Google Waterloo and is the mighty force behind Guildsmen Café's culinary specialties.
